Lemon Basil Spaghetti

This light but still filling dish was welcome at my table this week as summer heat peeked through. If you’re looking for yums to fill you up without weighing you down, this Lemon Basil Spaghetti with Italian Sausage and Asparagus recipe from Purple Carrot fits the bill. If you wanted to make this a vegan /vegetarian meal you could substitute the butter and parmesan for vegan options and trade in the meat for a vegan/vegetarian friendly protein option as well. This was quick and easy to make which was welcome given the heat that was already in my kitchen, and it lasted me 2-3 servings. For that, and for yummy flavor, I give it my happy belly approval.
